LION'S MANE MUSHROOM "CRAB CAKES"

simple & healthy recipe!

Forage, grow, or buy your lion's mane mushroom. Our recipe uses a 1 lb lion's mane mushroom, but you can use any size and scale recipe as needed.

INGREDIENTS

Onion

– 1lb lion's mane – Yellow onion – Garlic – Sweet peppers – Bread crumbs or panko  – 2 eggs – Parsley – Sea salt – Butter, softened to room temperature – Cayenne pepper (optional)

Dice (or shred) your lion's mane mushroom, peppers, and onions into small (~1/4") pieces.

STEP 1.

Sweat your lion's mane mushroom with the diced peppers and onions over low heat for about 15 minutes. Aim is to remove almost all the water so crab cakes hold together.

STEP 2.

We ended up with about 2.5 cups of the cooked lion's mane, pepper, and onion mixture. Next up: add the remaining ingredients & form into patties!

Combine your cooked lion's mane mushroom, pepper, and onion mixture with the rest of the ingredients (bread crumbs, egg, salt, parsley). Form into patties 2.5"-3" across.

STEP 3.

Lion's mane crabcake patties ready to be cooked! Let the formed patties sit about 5 minutes before cooking.

STEP 4.

Cook your lion's mane crabcakes until golden brown perfection on both sides. Yummm...

STEP 5.

Lion's mane crab cakes cooked to golden perfection, plated with aioli (recipe in post), pea shoots, and a lemon wedge.
